🍜 Authentic Japanese Yakisoba – Better Than Takeout!

Back in my university days, Yakisoba was one of my go-to comfort foods. At first, I used store-bought sauce, but I wanted something more authentic and flavorful—so I started experimenting!
There are different ways to make Yakisoba sauce: some recipes use ketchup, while others don’t. After trying various combinations, I decided to follow Ilshik Yebo’s recipe today!

✔️ Ingredients (2 servings)
Main Ingredients
- 2 packs Yakisoba noodles
- Bean sprouts (for extra crunch)
- 1/2 onion (sliced)
- 1/4 cabbage (chopped)
- Thinly sliced pork belly
- Frozen shrimp & squid
Yakisoba Sauce
Optional Toppings
- Bonito flakes (Katsuobushi)
- Fried egg 🍳
- Seaweed flakes (Aonori)
- Pickled ginger (Beni Shoga)
- Japanese mayo
🍽️ How to Make Yakisoba
1️⃣ Stir-fry the noodles
Heat oil in a pan and add the Yakisoba noodles. Pan-fry until slightly crispy, letting some moisture evaporate for a mix of chewy and crispy textures. Remove and set aside.

2️⃣ Add the bean sprouts
For that delicious smoky flavor, I char the bean sprouts separately using a kitchen torch. Set them aside once lightly charred.

3️⃣ Stir-fry the main ingredients
In the same pan, stir-fry shrimp, squid, pork belly, onion, and cabbage until cooked through.

4️⃣ Mix everything together
Return the noodles and bean sprouts to the pan. Gradually pour in the Yakisoba sauce, stirring to evenly coat all ingredients. Adjust seasoning as needed.

5️⃣ Add toppings & serve
Garnish with bonito flakes, fried egg, seaweed flakes, pickled ginger, and a drizzle of Japanese mayo if desired.
