🍜 Homemade Tsukemen – Japanese Dipping Ramen
Love ramen? Whether it’s brothy, mixed, or dipped, Japanese ramen comes in many delicious forms. Today, let’s make Tsukemen, a dipping-style ramen with a rich, umami-packed sauce!
I followed a recipe from Ilshik Yebo, a Japanese cuisine YouTuber, and made some adjustments to suit my taste. Let’s go! 🚀

✔️ Ingredients (5 servings)
Dipping Sauce (Tsuke Sauce)
- 1L water
- 4 tbsp tsuyu sauce
- 4 tbsp soy sauce
- 2.5 tbsp sugar
- 3 tsp oyster sauce
- 3 cloves minced garlic
- 3 tsp potato starch (for thickness)
- 15g bonito flakes (katsuobushi)
Toppings & Extras
- 500g pork belly (cubed)
- 2 green onions (chopped)
- 5 shiitake mushrooms (diced)
- Tsukemen noodles (or thick ramen noodles)
- Soft-boiled egg (Ajitama), fish cake, chashu, seaweed, bamboo shoots (optional)
🍽️ How to Make Tsukemen
1️⃣ Prepare the Tsuke Sauce
- Mix water, tsuyu, soy sauce, sugar, oyster sauce, garlic, and potato starch in a pot.

2. Microwave bonito flakes (50 seconds), then grind into powder. Stir into the sauce for a deep umami flavor.

2️⃣ Cook the Pork & Veggies
3. Pan-fry pork belly until fat is rendered.

4. Add green onions & mushrooms, cooking until slightly charred.

3️⃣ Combine & Simmer
5. Pour the Tsuke Sauce over the pork & veggies.

6. Simmer until thickened (adjust with more starch if needed).

4️⃣ Cook & Chill the Noodles
7. Boil tsukemen noodles, then rinse under cold water to remove excess starch.

5️⃣ Assemble & Serve
- Place the noodles in a bowl.

- Pour the rich dipping sauce into a separate bowl.
