Step-by-Step Instructions

  1. Wash 2 eggplants thoroughly and cut off both ends.

2. Cut each eggplant in half lengthwise, then crosswise, creating quarters.

3. Finely chop the green onion and one green chili pepper for the sauce. (Prepare about 2-3 tablespoons of green onion, or adjust to your liking)

4. Mix the following ingredients to create a sweet and sour sauce:

    • 1 tbsp each of soy sauce, vinegar, and low-calorie ketchup
    • 1 tbsp allulose (or 1.5 tbsp if you prefer it sweeter), 0.5 tbsp oyster sauce, 3 tbsp water

5. Dip a sheet of rice paper in water, place an eggplant quarter on it, and roll it up, tucking in the ends. (Pro tip: Fold the ends of the rice paper over the white part of the eggplant for extra crispiness. Use room temperature or cold water, not warm)

6. Heat 2 tablespoons of olive oil in a pan and place the wrapped eggplants, leaving space between each piece.

7. Cook on low heat, turning occasionally until all sides are golden brown and crispy.

8. Remove the crispy eggplant rolls and set aside. In the same pan, sauté the chopped green onion and chili.

9. Once fragrant, add the prepared sauce and simmer on low heat for about a minute.

10. Plate the eggplant rolls, drizzle with the sweet and sour sauce, and sprinkle with sesame seeds.
